  • 10 ml (2 tsp) olive oil
  • 2 garlic cloves
  • 4 5 x 1 cm ( 2 x 1/2 inch) strips orange peel
  • 7 ml (1 1/2 tsp) fennel seeds
  • 500 ml (2 cups) rinsed kalamata olives
  • 30 ml (2 tbsp) orange juice

Put it all together

  1. Heat the olive oil in a medium skillet over low heat until warm. Add the garlic, orange peel, and fennel seeds. Cook, stirring, until fragrant (30 to 60 seconds). Add olives and cook, stirring, until warmed through but not hot (about one minute).
  2. Remove from heat. Stir in the orange juice. Cover and let stand at room temperature for one hour. Serve at room temperature.
  3. One serving is 30 millilitres (two tablespoons). Refrigerate leftovers.
