Roast tasty pork tenderloin with carrots & apples

Gather your ingredients

This recipe takes 20 minutes to prepare and should marinate for 2 hours. It takes 45 minutes to cook and serves 4. Here's what you'll need:

  • 125 ml (1⁄2 cup) orange juice concentrate
  • 5 ml (1 tsp) honey
  • 2 ml (1⁄2 tsp) ground cumin
  • 1 ml (1⁄4 tsp) cinnamon
  • 1 ml (1⁄4 tsp) chili powder
  • 625 g (1 1⁄4 lb) boned pork loin roast, trimmed
  • 15 ml (1 tbsp) vegetable oil
  • 2 medium sweet potatoes, peeled and cut into 1.5 cm (3⁄4 in) pieces
  • 1 medium onion, cut into 1.5 cm (3⁄4 inch) pieces
  • 2 medium carrots, peeled and cut into 1.5 cm (3⁄4 in) pieces
  • 2 medium apples, cored, peeled, and cut into 4.5 cm (1 3⁄4 inch) pieces
  • 2 ml (1⁄2 tsp) salt
  • 125 ml (1⁄2 cup) dry white wine
  • 15 ml (1 tbsp) butter

Put it all together

  1. Combine juice concentrate, honey, cumin, cinnamon, and chili powder in a large bowl. Add pork and turn to coat. Cover and refrigerate for at least 2 hours or up to 24, turning pork occasionally.
  2. Preheat oven to 180°C (350°F). Heat oil in a very large baking dish over medium-high heat. Add pork. Brown on all sides for about five minutes. Transfer to a plate and wipe the dish clean.
  3. Place sweet potato, onion, carrot, apple, salt, and wine in baking dish. Place pork on top of vegetables and brush with marinade. Cover with aluminium foil.
  4. Roast pork until an instant-read meat thermometer registers 75°C (167°F) when inserted in the centre (about 40 minutes). The juices should run clear when a skewer is inserted into the pork.
  5. Place pork on a cutting board and let stand for five minutes. Stir butter into vegetables. Slice pork and serve with vegetables.
