How to make homemade bread in a slow cooker

October 13, 2015

Making homemade bread in a slow cooker can actually be faster than the oven. Rather than making dough and waiting for it to rise before baking it, slow cookers let you place the dough inside the slow cooker immediately, where it rises more quickly, then cooks in one step.

How to make homemade bread in a slow cooker

Choosing a recipe

  • Most bread recipes are adaptable to slow cooking, but choosing a no-knead bread recipe is often easiest.
  • The best slow cooker breads are the recipes that require the least amount of handling.
  • Also, you shouldn't expect to form a rectangular loaf, since slow cooker bread will expand and form the shape of the crock.

Cooking the loaf

  • After the dough has been made, it can be placed in the slow cooker to rise.
  • Once the dough is placed in the crock, the appliance should be turned to its highest setting and the lid should remain on. You should not remove the loaf of bread until it is fully cooked.
  • To ensure that the finished loaf can be easily removed from the slow cooker, many people grease the crock with butter or oil before placing the dough inside.
  • Another option is to use a piece of parchment paper between the dough and crock.

Determining the ideal cooking time

  • The right cooking time will vary depending on the slow cooker and the volume of the bread recipe. In most cases, the bread should cook for at least 90 minutes without being disturbed.
  • Then, every 10 minutes, the loaf should be checked until it is done.
  • The best way to check the loaf is to use an internal thermometer. The interior of the loaf should register at approximately 95 degrees Celsius.
  • The top of the bread should be firm and the bottom of the loaf should be slightly crisp and browned.

Creating a dark crust

  • Bread cooked in a slow cooker has a soft, light-coloured crust. While many people who like store bought bread may prefer this, others may want a crustier loaf.
  • To achieve a dark brown crust, the bread should be removed from the slow cooker immediately after it's baked and placed on the middle rack of the oven.
  • Then the broiler should be used to brown the top of the loaf until the desired colour is reached.

While this bread can cook while you're out running errands, you may want to stay in the house for the first few loaves. That way, you can regularly check the bread and determine the exact cooking time for your crock-pot.
