Try this guilt-free recipe: Juicy apples with oat and seed crunch

A fresh and fibre-rich take on the classic crumble, these lightly stewed apples and prunes with a golden oat topping are a special treat with a spoonful of yogurt or vanilla pudding.

Apples have been called nature's toothbrush. While they don't actually cleanse the teeth, biting and chewing an apple stimulates the gums, and the sweetness of the apple prompts an increased flow of saliva, which reduces tooth decay by lowering the levels of bacteria in the mouth.

Serves 4

You will need

450 g (1 lb) cooking apples

120 ml (1/2 c) apple juice

120 g (½ c) quartered pitted prunes

30 g (2 tbsp) butter

120 g (1/2 c) whole rolled oats

30 g (2 g) sunflower seeds

30 g (2 g) granulated sugar

60 g (1/4 g) plain yogurt

To start

1. Peel, core and cut the apples into one centimetre (1/2 inch) slices.

2. Place in a pot and add the juice.

3. Bring to a boil, reduce the heat and cover. 4. Simmer for about five minutes, stirring occasionally, until soft but not mushy.

5. Add the pieces of prunes and gently toss them into the pot.

6. Cover and set aside off the heat.

7. Melt the butter in a frying pan over medium heat.

8. Add the oats and sunflower seeds, increase heat to medium-high and cook, stirring, for about two minutes, or until the oats and seeds are browned.

9. Add the sugar and stir until it melts and coats the mixture.

10. Remove pan from the heat. Divide the apple among four dishes and top with the oat mixture.

Spoon 15 millilitres (one tablespoon) of yogurt onto each portion and serve hot or warm.

Alternative ingredients

• Almost any dried fruit can be used to sweeten the apples instead of prunes: peaches, pears, apricots, golden or regular raisins, cranberries or any mixed dried fruit.

• Add 50 grams (1/4 cup) chopped walnuts with the sugar.

• Try mixed seeds, such as sesame, sunflower and pumpkin, or use a combination of chopped mixed nuts and seeds.

Cook’s tip

Make double the quantity and freeze in individual portions. You can also do this if you have leftover stewed apples. The crunchy topping can be frozen separately and sprinkled over ice cream or yogurt.
