Seriously satisfying quick-and-easy meatball sub

From the first mouthful, this is an amazing meatball sub: a mixture of ground beef and turkey keeps these subs on the lighter side, but no less brimming with flavour. Toast the rolls for extra crunch. If you can spare the calories, add a slice of low-fat provolone to each sandwich. All that remains? To enjoy!

Ingredients

  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 150 g (3/4 c.) plain, dry bread crumbs
  • 125 ml (1/2 c.) fat-free milk
  • 50 g (1/4 c.) chopped fresh parsley
  • 2 egg whites
  • 1 g (1/4 tsp.) salt
  • 2 g (1/2 tsp.) dried oregano
  • 1 g (1/4 tsp.) ground black pepper
  • Pinch of ground nutmeg
  • 350 g (12 oz.) extra-lean ground beef
  • 350 g (12 oz.) ground turkey breast
  • 800 ml (3 c.) low-sodium tomato and basil pasta sauce
  • 6 low-calorie submarine sandwich rolls (each about 15 cm or 6 in. long)

Cooking instructions

  1. Coat a large skillet with cooking spray and heat over medium-high heat.
  2. Add the onions and cook, stirring occasionally until soft, about five minutes. Add the garlic and cook for one minute.
  3. Meanwhile, combine the breadcrumbs and milk in a large bowl. Let stand until the milk is absorbed.
  4. Scrape the cooked onions and garlic into the bowl along with the parsley, egg whites, salt, oregano, pepper and nutmeg.
  5. Add the beef and turkey and, using your hands, gently mix and shape into about 30 meatballs measuring 3.5 cm (about 1 1/4 in.) in diameter.
  6. Coat the skillet with cooking spray and heat over medium heat.
  7. Add the meatballs in batches, if necessary, to avoid crowding. Cook until browned all over and just barely pink in the centre (about 70°C/160°F internal temperature), eight to 10 minutes, turning every few minutes.
  8. Reduce the heat to low and add the pasta sauce to the skillet, tossing the meatballs until well coated. Cook until bubbly, three to five minutes.
  9. For each sandwich, drizzle several spoonfuls of sauce and about three meatballs onto a sandwich roll. Serve hot and enjoy!
