With the right setup and using the right varieties of fruits and vegetables, you can ensure that you have a successful harvest throughout winter and into the spring.

Fruits and vegetables to grow in cold climates

1. Peaches

  • Peaches grow well in cold weather with the proper care. To make sure that peaches grow without getting ruined by moisture and frost, you need to plant peach trees against a south facing wall.
  • Make sure they receive partial cover from the sunlight as well by planting them under an eave.
  • Keep them well-pruned and they should be able to grow through the winter.

2. Blueberries

  • Blueberries do well when planted in cold weather. They also make pretty additions to a garden because their leaves turn beautiful colours in the Autumn.
  • They need to be pruned and tended to throughout the cold months but they can survive even a bitter frost.
  • You can use row covers after the fruits bloom to extend their lives.

3. Rhubarb

  • Rhubarb is an excellent heirloom vegetable that can be grown in cold climates. It's easy to grow and produces a large stem with bright red skin and a tart apple-berry flavour.
  • When first planted, refrain from harvesting the stem for a few years to ensure that the plant has a long life and remains productive. Also, remember not to eat the leaves because they can be poisonous.

4. Carrots

  • Carrots, like other vegetables that grow in the ground, are generally kept safe during the winter. You can plant them anytime but just be sure to use mulch to keep the roots warm throughout the winter.
  • You can stack compost on the ground above them so that when it snows or rains, it won't freeze directly on the ground.
  • They perform well through the winter because they have a thick stem and hearty roots.
