Blood-pressure friendly version of devilled eggs

Watching your blood pressure doesn't mean you have to pass on rich, classic favourites like devilled eggs. Try this recipe for Heavenly Devilled Eggs that are low in cholesterol but high in flavour.

Blood-pressure friendly version of devilled eggs

Get cracking

Preparation time 15 minutes; Cooking time 25 minutes; Serves 10

Ingredients:

  • 12 large eggs
  • 175 ml (3/4 c) nonfat sour cream
  • 2 scallions, finely chopped
  • 75 g (1/3 c) finely chopped green pepper
  • 75 g (1/3 c) finely chopped red pepper
  • 10 ml (2 tsp) Dijon mustard
  • Salt to taste
  • 45 ml (3 tbsp) finely chopped parsley
  • Paprika, for dusting

Instructions:

  1. Bring eggs and cold water to a full boil in a pot. Remove from heat, cover and let stand 15 minutes. Drain eggs and rinse under cold water to cool them
  2. Peel eggs, then cut lengthwise in half, and remove yolks. Discard 8 yolks
  3. Arrange 20 egg white halves on platter. Chop remaining 4 egg white halves very finely. Mash 4 yolks with fork
  4. Transfer whites and yolks to medium bowl. Stir in sour cream, scallions, green and red peppers, mustard and salt
  5. Pipe or spoon egg mixture into egg white halves. Sprinkle with parsley and dust with paprika

Spice it up

  • Make these eggs spicy! Add 2 millilitres (1/2 teaspoon) chili powder or 1 millilitres (1/4 teaspoon) cayenne to the egg mixture
  • Or substitute a very finely minced jalapeño pepper into the egg mixture
