Ingredients:

  • 30 g (2 tbsp) olive oil
  • 2 limes
  • 30 ml (2 tbsp) dry white wine
  • 4 cloves garlic
  • 4 pork fillets, about 480 g (1 lb) total
  • 15 g (1 tbsp) finely chopped fresh parsley
  • 30 g (2 tbsp) low-fat sour cream

Instructions:

  1. In a shallow non-metallic dish, mix olive oil, juice of one lime, dry white wine and two crushed cloves garlic.
  2. Cut pork fillets diagonally in half. Coat with the marinade and let marinate for 30 minutes.
  3. To make the gremolata, first zest one unwaxed lime. Peel and remove the pith, then cut the lime into small chunks. Combine the lime zest with finely chopped fresh parsley and two large finely chopped cloves garlic.
  4. Cook the pieces of pork together with the marinade in a large frying pan over medium heat for 10 minutes, or until golden and cooked through.
  5. Stir in the lime chunks and add low-fat sour cream and let warm through. Serve the pork with the creamy lime sauce and gremolata sprinkled on the top.
