  1. When you can't think of what to do with chicken, mix up this quick and surprising marinade. Grate the zest and squeeze the juice from one lime and one lemon into a large zip-close bag. Stir in one 175 millilitre (3/4 cup) can thawed orange juice concentrate, 125 millilitres (1/2 cup) tomato sauce, two minced garlic cloves, five millilitres (one teaspoon) dried Italian seasoning and two millilitres (half a teaspoon) hot-pepper sauce. Drop in 500 grams (16 ounces) boneless chicken parts and marinate in the refrigerator for four to eight hours. Grill or broil the chicken and serve with prepared salsa.
  2. Use the same marinade for pork. Marinate one kilogram (32 ounces) pork tenderloin in the mixture for four to eight hours. Grill or broil the pork, then boil the marinade for five minutes. Dissolve five grams (one teaspoon) cornstarch in 50 millilitres (1/4 cup) cold chicken broth, then stir into the marinade to thicken. Serve with the pork.
  3. To make a refreshing brine for fish, combine 500 millilitres (two cups) fresh orange juice, 30 millilitres (two tablespoons) fennel seeds, 30 millilitres (two tablespoons) sugar, 45 millilitres (three tablespoons) kosher salt and two millilitres (half a teaspoon) freshly ground black pepper. Add thick fish steaks or fillets and refrigerate for up to two hours. Remove from the brine and grill, broil or pan-fry the fish.
  4. To breathe new life into creamy squash or red-pepper soups, stir in 50 millilitres (1/4 cup) fresh orange juice.
  5. For a new twist on tapioca pudding, combine 500 millilitres (two cups) fresh orange juice, 75 millilitres (1/3 cup) sugar, 45 millilitres (three tablespoons) quick-cooking tapioca and a pinch of salt in a pot. Let stand for five minutes. Bring to a boil over medium heat, stirring constantly. Remove from the heat and cool for 20 minutes. The pudding will thicken as it cools. Stir until smooth and serve warm or chilled.
  6. To freshen up spaghetti sauce, squeeze in the juice of one to two oranges.
  7. To give steamed rice an uplifting aroma, add 50 millilitres (1/4 cup) fresh orange juice to the cooking water.
  8. For a lively teriyaki marinade for beef, pork or chicken, mix together:
  • 125 ml (1/2 c) fresh orange juice
  • 50 ml (1/4 c) soy sauce
  • 30 ml (2 tbsp) honey
  • 15 ml (1 tbsp) grated fresh ginger
  • 5 ml (1 tsp) grated orange zest
  • 2 garlic cloves, minced
  • 15 ml (1 tbsp) toasted sesame oil
