July 29, 2015

Growing herbs doesn't just make your garden beautiful and fragrant, it can also kickstart your time in the kitchen. From your breakfast omelet to your evening tea, things you grow in your garden can add flavour and nutrients to everything you eat.

6 recipes to get you using your garden herbs

1. Italian scramble

  • Add five millilitres (one teaspoon) each of minced fresh oregano, basil and thyme to about eight large eggs before scrambling them.
  • Round out the flavours with a bit of minced onion, either raw or sautéed.

2. Herbed pancakes

Herbed pancakes turn breakfast into a light supper.

  • Add five millilitres (one teaspoon)of fresh sage and 15 millilitres (one tablespoon) each of chopped chives and Parmesan cheese to pancake or crêpe batter.
  • If you like, roll up thin slices of ham or cheese in the finished flapjacks.

3. Tarragon root vegetables

  • Marry tarragon with healthy root vegetables by adding 15 millilitres (one tablespoon) of minced tarragon to 500 millilitres (two cups) each of gratedparsnips and grated carrots.
  • Quickly stir-fry the mixture in 30 millilitres (two tablespoons) of clarified butter or canola oil.

4. Herb-y burgers

  • Spice up burgers by mixing 15 millilitres (one tablespoon) each of minced fresh chives and parsley to 450 grams (one pound) of ground beef, along with an egg and two millilitres (1⁄2 teaspoon) of seasoned salt.
  • Form into patties and grill.

5. Granita

  • Create a refreshing granita with basil and honeydew-melon juice.
  • Try a spicy variety of basil — such as spicy globe or Greek — if you like.

6. Herbal tea and cocktails

  • To brew tea from homegrown herbs, warm a china or glass teapot (don't use metal) and put in 30 millilitres (two tablespoons) of chopped fresh herbs or 10 millilitres (two teaspoons) of dried herbs.
  • Pour in 500 millilitres (two cups) of boiling water and steep for six or seven minutes if using fresh herbs; for dried herbs, steep a minute longer. Strain, then sweeten with honey or sugar to taste.
  • You can also have a fancy-cocktail party where you let your guests choose between a variety of fresh herbs to add to their soda water!
