Baked Feta Pasta

Arguably one of the most delicious social media trends of all time, the infamous baked feta pasta recipe is both simple and affordable. The #FetaPasta hashtag has over 650 million views on the video-sharing platform and the trending dish has even caused feta shortages at grocery stores around the world. Follow these simple steps to recreate this creamy oven-baked pasta recipe at home.

  1. Pour a pint of cherry tomatoes into an oven-proof baking dish. Add minced garlic, salt and pepper, and a drizzle of olive oil.
  2. Place a block of feta cheese in the centre of the dish. If you’re not a feta fan, try goat cheese or herb-infused Boursin instead.
  3. Place the dish in the oven at 400 °F and bake for about 30 minutes.
  4. Meanwhile, prepare a box of dry pasta on the stove top in salted boiling water.
  5. Remove your dish from the oven and stir the melted feta with the blistered tomatoes to create a creamy sauce.
  6. Combine your cooked pasta with the sauce and give everything a good mix. Top with fresh basil and enjoy.

Folded Tortilla Quesadillas

You’ll never prepare quesadillas the same way again after watching this viral tortilla folding hack on TikTok. These on-trend loaded tortillas can be personalized with your favourite proteins, veggies, cheese, and sauces for a choose-your-own-adventure dinner. Popular toppings include breaded chicken with mozzarella, avocado and bacon; turkey and avocado with pesto and tomato; or even a cheeseburger-inspired beef patty with shredded lettuce, cheddar, and fried onions.

  1. Take a large 10-inch flour tortilla and slice a slit from the centre of the wrap to the bottom
  2. Add your chosen ingredients to each of the four sections of the tortilla (be careful not to go overboard and risk over-stuffing your quesadilla).
  3. Fold each of the sections on top of each other starting from the bottom-left corner and moving clockwise until you have a neat stack.
  4. Cook the tortilla on both sides using a panini press or a heated cast iron skillet to help seal the toppings in place.
  5. Serve your handheld quesadillas with a side salad for a complete dinner.

Sheet Pan Dinners

Much like other viral TikTok recipes, sheet pan dinners are incredibly simple and feature a variety of roasted proteins, veggies, and starches that can be customized to your taste and dietary preferences. Whether you prepare your sheet pan dinner with chicken, sausage, stewing beef, or vegetarian ingredients, this simple weeknight meal requires just one baking sheet, which makes cleaning up a breeze!

  1. Line a large sheet pan with aluminum foil or parchment paper.
  2. Fill the pan with roughly chopped vegetables. Brussels sprouts, carrots, cauliflower, zucchini, asparagus, onions, and potatoes all work well for roasting.
  3. Place your protein of choice on top of the veggies and add a generous drizzle of olive oil.
  4. Add flavour to your sheet pan dinner with seasonings such as paprika, garlic powder, red pepper flakes, or onion powder.
  5. Add salt and pepper to taste and bake in the oven until meat is cooked through, checking the pan halfway through to toss your ingredients.
