It was Halloween 2011 when Jason Costantini introduced himself to a pretty blond at a party. At the time, he was acting chef at Libretto restaurant on the Danforth while she was helping her father open a chain of restaurants in Miami. “There was this immediate connection through food,” recalls Lisa Costantini, who was smitten right away.
Soon, the two moved in together and started cooking up business ideas. “We thought about how great wood-burning pizza tastes and Jason came up with the idea of barbecue pizza,” Lisa says. It was genius. “We envisioned a brick and mortar restaurant with this super inexpensive piece of equipment that could produce great quality pizza really fast.”
Splashed across countless best-of-pizza lists in the city, Za Pizzeria is one of the go-to Annex spots for rustic pizza recipes with a modern spin. The Bloor Street spot’s custom-built pizza oven is a BBQ that’s been retrofitted to cook like a traditional wood-fired oven, for thin-crust pizza worthy of the old country. The Oh Canada intriguingly features maple syrup, mozzarella, bacon and crushed potato chips (trust me, it works), while the Funghi is loaded with sautéed mushrooms and goat cheese and topped with a velvety porcini cream.
